If you’ve got those late night munchies, grab your bag of Doritos and give this omelette a try!

RECIPE
DORITOS SPANISH OMELETTE
(Serves 4-6)

INGREDIENTS
¼ cup olive oil
1 medium sweet onion, sliced
6 large eggs, room temperature
½ 9-ounce bag Doritos Cool Ranch Chips

PREPARATION
In a bowl crack in the eggs. Use a fork or whisk to combine.
Add in the Doritos Cool Ranch chips, using a soft spatula or spoon to combine. Let sit for at least 15 minutes
Set a medium-sized frying pan over medium heat. Add the 2 tablespoons olive oil and onions. Cook until softened and lightly golden, about 3-5minutes. Season with salt to taste. Remove from heat.
Add cooked onions to the egg mixture..
Add 1 tablespoon oil into the pan. Pour in the egg-Doritos mixture. Slightly scrabble until the eggs are partially cooked. Smooth out and allow to cook until the edges and bottom have set, about 3 minutes. If the edges look dry, add another tablespoon of oil along the edges of the pan.
Use a spatula to carefully loosen the edges of the omelette. Place a large plate on top of the mixture.
Flip the tortilla onto the plate. Add another tablespoon of oil to the pan, then carefully slide the omelette back into the frying pan, cooking until the bottom has set, another 2-3 minutes.
